The Amaranthus is a genus with more than 60 different species and is mainly found in temperate to tropical regions. The Amaranthus grows best in nutrient-rich and moist soil and needs a lot of sun hours. In Africa, the Amaranthus is even considered as food and the young leaves are used as spinach. The seed is eaten raw or cooked.
